Hoppin’ John Stir-Fry

A dish inspired by Hoppin' John — the Lowcountry New Year's tradition of red peas or black-eyed peas for luck, wealth, and prosperity.

Instructions

01
Cook the black-eyed peas until just tender the night before and leave uncovered in the fridge overnight.
02
Heat oil in a large sauté pan or wok over medium heat.
03
Sauté the onions until fragrant and translucent, about 5 minutes.
04
Add the soy sauce, mirin, and paprika and stir to combine.
05
Add the broccoli and carrots and heat through, about 3–5 minutes.
06
Add the rest of the vegetables, excluding the peas.
07
Once everything is incorporated, add the black-eyed peas and heat through.
08
Serve over Carolina Gold rice, add a protein, or enjoy as is with fresh lime juice and cilantro.
