Bloody Butcher Grits - Limited Fall Release

Deep color. Rich flavor. A little mystery.

Bloody Butcher is a historic open-pollinated dent corn with roots in Appalachian and Southern farming traditions dating back to the mid-1800s. Its striking kernels range from deep red to burgundy, giving these grits a distinctive color and character worthy of their unforgettable name.

Stone-ground at Marsh Hen Mill, Bloody Butcher Grits deliver a deep, earthy corn flavor and a hearty texture. Serve them simply with butter, pair them with your favorite savory toppings, or create something deliciously unexpected for your Halloween table.

This limited-edition heirloom corn was made for the season, but it will not be around for long.

Available while supplies last. Once it’s gone, it’s gone.

Jimmy Red Grits are a success story for Marsh Hen Mill and for all those who believe in reviving good things from the past that have been forgotten. Greg spent eight years cultivating the almost-extinct variety of kernels on Edisto Island. This mission all started with a few preserved samples from James Islander Ted Chewning. Sean Brock was interested in bringing back the variety to his restaurants and Greg and the family were able to help make that happen.

The kernels are a warm, pumpkin color in this beautiful heirloom strain. Sturdy and full bodied, Guinea Flint corn makes hearty grits. Professor David Shields of the University of South Carolina has found that this corn crossed the Atlantic twice, once in pre-Colonial days from the South to Africa, where certain qualities selected by growers. When it returned to the South in the 19th century, the single-ear-per-stalk crop could produce up to eight cobs per stalk. These are definitely worth the extra cook time!

Tradition is what comes to mind when we think of the polenta. Originating in Northern Italy, polenta had a humble beginning, but it is now one of the most famous staples in kitchens around the world.  Made from whole-grain corn and milled fresh, our polenta preserves the full spectrum of natural oils and flavors locked in the kernel, resulting in a richer, more complex taste compared to industrially processed versions. When prepared with care, it develops a silky, almost custard-like consistency that still retains a pleasant beaded texture—tiny, tender grains that give the dish body and character.
