Grains

Carolina Gold Rice gets it’s name from the beautiful golden hue in the field right before harvest. It is known as the grandfather of long grain rice in the Americas. This historic rice has exceptional aroma, flavor and texture. It has a subtle nutty almond and floral aromas and flavors as well as a starch structure that makes it uniquely prized by home cooks and chefs alike.

Jimmy Red Grits are a success story for Marsh Hen Mill and for all those who believe in reviving good things from the past that have been forgotten. Greg spent eight years cultivating the almost-extinct variety of kernels on Edisto Island. This mission all started with a few preserved samples from James Islander Ted Chewning. Sean Brock was interested in bringing back the variety to his restaurants and Greg and the family were able to help make that happen.

Sea Island Red Peas have a flavor profile that’s rich, earthy, and deeply savory, with a subtle nutty sweetness. When cooked, their texture is tender but slightly firm, offering a pleasant bite that holds up well in stews, soups, and rice dishes. The flavor is often described as robust and hearty, carrying hints of smokiness and a mild, natural sweetness that complements spices without being overpowering. Compared to standard red beans, Sea Island Red Peas have a more pronounced, almost buttery depth, with an earthy undertone that evokes traditional Southern and Caribbean cooking.

They pair beautifully with aromatics like onions, garlic, thyme, and smoked meats, absorbing flavors while maintaining their own distinctive, slightly earthy character. The overall taste experience is comforting, full-bodied, and rich in umami, making them a versatile choice for both simple and complex dishes

Reviving Jimmy Red Cornmeal: A Success Story of Marsh Hen Mill

Marsh Hen Mill's Jimmy Red Cornmeal is a testament to the success of reviving historic and almost-extinct grains. Greg dedicated eight years to cultivating this unique variety on Edisto Island, starting with preserved kernels from James Islander Ted Chewning. Sean Brock's interest in featuring Jimmy Red Cornmeal in his restaurants played a pivotal role in bringing this nearly forgotten variety back into the culinary spotlight. This collaboration highlights the commitment to preserving and celebrating traditional ingredients.

Indigo Popcorn

Our Indigo Popcorn begins as tiny, jewel-like kernels of deep indigo blue, each with a rock-hard shell that guards the soft, tender center. Heat transforms them in a dramatic explosion. Trapped moisture turns to steam, building pressure until the kernel bursts open with a satisfying pop, revealing the airy, snow-white flake inside.

But the magic isn’t just visual. Once popped, Indigo Popcorn offers a delicate, slightly nutty sweetness, with a hint of corn’s natural earthiness. Each fluffy bite delivers a satisfying crunch followed by a tender, melt-in-your-mouth texture, making it both fun to eat and irresistibly flavorful. Whether enjoyed plain or lightly seasoned, it’s a playful, colorful twist on a classic snack—where the experience is as delightful as the taste.

Charleston Gold Brown Rice is a firm textured, long grain, aromatic rice with a nutty, wholesome and grassy flavor. Charleston gold was bred off of Carolina gold for increased yield, it is bred as an immature rice and has a more grassy, floral flavor than Carolina Gold. We are bringing it to you in its natural form right out of the field, all we’re doing is taking it out of the hull.

Our Middlins consist of broken and smaller pieces of Carolina Rice that are produced during the hulling and processing of our Carolina Gold Rice. Traditionally middlins have been used in dishes such as purloo, and various "bogs". They have all the flavor and pedigree of Carolina Gold, but they cook a little quicker and are favored for recipes where they will be incorporated more than being served as a stand alone side.

Our Heirloom Speckled Grits are Stone Ground to perfection to give you a creamy delicious bowl of grits no matter what your preference! A perfect mixture of our white and yellow grits, that give you a slightly different flavor profile than either one has on its own. A blend of the two products that we started with gives you the best of both worlds.

Farro Piccolo, also known as Einkorn, is one of the world’s most ancient and naturally rich forms of wheat, prized for its nutty flavor and satisfying texture. Our Farro Piccolo is semi-pearled, meaning the outer bran layer is partially removed to allow faster cooking times while still retaining much of its wholesome fiber and nutritional value. Each tender, chewy grain offers a warm, subtly sweet, and earthy flavor that makes it a versatile ingredient in both hearty main dishes and simple side dishes. Its ancient heritage and robust flavor profile bring a nutritious and flavorful dimension to soups, salads, grain bowls, risottos, or even served simply on its own.

At Marsh Hen Mill, we are excited to release Black Nile Barley, another important crop grown by our farming partners as part of a thoughtful and regenerative crop rotation system. Rotating crops like barley helps improve soil health by naturally breaking pest cycles, increasing biodiversity in the field, and supporting the long-term sustainability of the farm. By incorporating barley into the rotation, one of our farmers is able to build healthier soils while producing a grain that reflects the care and stewardship behind every harvest.

Black Nile Barley also represents our continued commitment to bringing unique and flavorful grains to the table. With its rich color, nutty depth, and earthy complexity, this barley opens the door to a wide range of cooking possibilities. It can be used in hearty soups and stews, folded into grain salads, cooked like risotto, or incorporated into baked goods.

This first release of Black Nile Barley is intentionally limited, allowing us to share something truly special while continuing to learn alongside our farmers, and customers including bakers, brewers, and chefs. We believe deeply in the potential of this grain. If people love working with and cooking with Black Nile Barley as much as we do, it could very well earn a permanent place in our lineup and in our crop rotations for years to come

The kernels are a warm, pumpkin color in this beautiful heirloom strain. Sturdy and full bodied, Guinea Flint corn makes hearty grits. Professor David Shields of the University of South Carolina has found that this corn crossed the Atlantic twice, once in pre-Colonial days from the South to Africa, where certain qualities selected by growers. When it returned to the South in the 19th century, the single-ear-per-stalk crop could produce up to eight cobs per stalk. These are definitely worth the extra cook time!

Tradition is what comes to mind when we think of the polenta. Originating in Northern Italy, polenta had a humble beginning, but it is now one of the most famous staples in kitchens around the world.  Made from whole-grain corn and milled fresh, our polenta preserves the full spectrum of natural oils and flavors locked in the kernel, resulting in a richer, more complex taste compared to industrially processed versions. When prepared with care, it develops a silky, almost custard-like consistency that still retains a pleasant beaded texture—tiny, tender grains that give the dish body and character.

This gluten free Carolina gold rice flour is a must for your baking repertoire. Packed with nutrients, it will expand your family’s expectations of your baking acumen.
