"Johnny Cake" was first used in South Carolina in 1739. Historians believe the American Indian word "janiken" meant "corn cake". Johnny Cakes were a staple in colonial times from the Caribbean to Newfoundland. Variations of this Legendary "cake" are as diverse as the people who made them.

Unenriched Cracked Corn

Tradition is what comes to mind when we think of the polenta. Originating in Northern Italy, polenta had a humble beginning, but it is now one of the most famous staples in kitchens around the world.  Made from whole-grain corn and milled fresh, our polenta preserves the full spectrum of natural oils and flavors locked in the kernel, resulting in a richer, more complex taste compared to industrially processed versions. When prepared with care, it develops a silky, almost custard-like consistency that still retains a pleasant beaded texture—tiny, tender grains that give the dish body and character. 

Unicorn Cornmeal has a creamy texture before adding any creams or butter. This makes one of a kind cornbread, corn cakes, or pie crust. Our cornmeal consistency is closer to traditional flour because of our antique stone ground mills

Our Middlins consist of broken and smaller pieces of Carolina Rice that are produced during the hulling and processing of our Carolina Gold Rice. Traditionally middlins have been used in dishes such as purloo, and various "bogs". They have all the flavor and pedigree of Carolina Gold, but they cook a little quicker and are favored for recipes where they will be incorporated more than being served as a stand alone side.

The Carolina Conch Pea is known for its wholesome, pleasant flavor and its ease of cooking. It is prized as an extremely delicate pea with a creamy texture. This pea is also known for having one of the most refined tastes when compared to other peas. First offered in 1907, Marsh Hen Mill has brought it back to your kitchen table once again.

Charleston Gold Brown Rice is a firm textured, long grain, aromatic rice with a nutty, wholesome and grassy flavor. Charleston gold was bred off of Carolina gold for increased yield, it is bred as an immature rice and has a more grassy, floral flavor than Carolina Gold. We are bringing it to you in its natural form right out of the field, all we’re doing is taking it out of the hull.

Pepper Jelly is a southern tradition that we rely on to start & end our day. It complements everything. Pepper jelly can be used as a topper or a glaze for apps, salads & main dishes.

We like to start our day with it on scrambled eggs. You absolutely must try it to understand how it elevates eggs to something really special. It makes a perfect app for entertaining. Just use it to top of cream cheese & crackers, also great with goat cheese, brie or smoked cheddar. When dinner time rolls around, we love to use it as a glaze on fresh grilled fish.

EdisTOE Jam is a delicious blend of tangerine, orange and elderberry is a delightful jumble of berries and citrus that will add a burst of fruit flavor to whatever you spread it on.

It can be set out in a bowl with a cheese plate, stirred into oatmeal, used as a substitute for pumpkin or applesauce in recipes, or used to top pancakes or waffles.

Foresight Coffee Marsh Hen Mill Blend

a blend of central and South American coffees with notes of dark chocolate walnut and ripe cherry with a clean finish.

This fruit forward Preserves is heavy on strawberries and not much else. You'll feel like you have access to fresh strawberries all year long with this delicious spread.

Ingredients: Strawberries, sugar, pectin, citric acid.

The taste of dill and cucumber come together in this creamy dressing that will compliment a salad or can be used as a dip for vegetables. Use this instead of ranch to add a little something different to your veggie plate. It can also substitute for mayonnaise or other fat based spreads in recipes.
