The kernels of guinea flint corn are a warm, pumpkin color in this beautiful heirloom strain. Sturdy and full bodied, Guinea Flint corn makes a hearty cornmeal. Professor David Shields of the University of South Carolina has found that this corn crossed the Atlantic twice, once in pre-Colonial days from the South to Africa, where certain qualities selected by growers. When it returned to the South in the 19th century, the single-ear-per-stalk crop could produce up to eight cobs per stalk. We are extremely happy to be able to offer it to you.

Our Middlins consist of broken and smaller pieces of Carolina Rice that are produced during the hulling and processing of our Carolina Gold Rice. Traditionally middlins have been used in dishes such as purloo, and various "bogs". They have all the flavor and pedigree of Carolina Gold, but they cook a little quicker and are favored for recipes where they will be incorporated more than being served as a stand alone side.

"Johnny Cake" was first used in South Carolina in 1739. Historians believe the American Indian word "janiken" meant "corn cake". Johnny Cakes were a staple in colonial times from the Caribbean to Newfoundland. Variations of this Legendary "cake" are as diverse as the people who made them.

Unenriched Cracked Corn

Charleston Gold Brown Rice is a firm textured, long grain, aromatic rice with a nutty, wholesome and grassy flavor. Charleston gold was bred off of Carolina gold for increased yield, it is bred as an immature rice and has a more grassy, floral flavor than Carolina Gold. We are bringing it to you in its natural form right out of the field, all we’re doing is taking it out of the hull. 

Tradition is what comes to mind when we think of the polenta. Originating in Northern Italy, polenta had a humble beginning, but it is now one of the most famous staples in kitchens around the world.  Made from whole-grain corn and milled fresh, our polenta preserves the full spectrum of natural oils and flavors locked in the kernel, resulting in a richer, more complex taste compared to industrially processed versions. When prepared with care, it develops a silky, almost custard-like consistency that still retains a pleasant beaded texture—tiny, tender grains that give the dish body and character. 

Unicorn Cornmeal has a creamy texture before adding any creams or butter. This makes one of a kind cornbread, corn cakes, or pie crust. Our cornmeal consistency is closer to traditional flour because of our antique stone ground mills.

Our freekeh is made from roasted green spelt, a wholesome grain cherished for centuries in the Middle East and Northeastern Africa. Known for its nutty, smoky flavor and satisfyingly chewy texture, freekeh adds depth and heartiness to salads, pilafs, soups, and grain bowls. Beyond its delicious taste, freekeh is a nutritional powerhouse—rich in dietary fiber, which supports healthy digestion, and an excellent source of plant-based protein and essential minerals like magnesium. Its slightly toasted aroma and versatile texture make it a flavorful and nourishing choice for both everyday meals and special culinary creations.

Oaxacan Green Corn Grits - Limited Spring Release 
Stone-ground from heirloom Oaxacan Green corn, these grits have a warm golden color speckled with natural green flecks from the distinctive kernels. The flavor is rich and deeply corn-forward with subtle nutty and earthy notes that set it apart from traditional yellow grits. Originally grown in Oaxaca, Mexico,  this unique variety is prized for its character and color, and when stone-milled it produces a creamy, flavorful bowl that highlights the full taste of the grain.

At Marsh Hen Mill, we are excited to release Black Nile Barley, another important crop grown by our farming partners as part of a thoughtful and regenerative crop rotation system. Rotating crops like barley helps improve soil health by naturally breaking pest cycles, increasing biodiversity in the field, and supporting the long-term sustainability of the farm. By incorporating barley into the rotation, one of our farmers is able to build healthier soils while producing a grain that reflects the care and stewardship behind every harvest.

Black Nile Barley also represents our continued commitment to bringing unique and flavorful grains to the table. With its rich color, nutty depth, and earthy complexity, this barley opens the door to a wide range of cooking possibilities. It can be used in hearty soups and stews, folded into grain salads, cooked like risotto, or incorporated into baked goods.

This first release of Black Nile Barley is intentionally limited, allowing us to share something truly special while continuing to learn alongside our farmers, and customers including bakers, brewers, and chefs. We believe deeply in the potential of this grain. If people love working with and cooking with Black Nile Barley as much as we do, it could very well earn a permanent place in our lineup and in our crop rotations for years to come
