Low Country Shrimp and Grits

A Lowcountry classic that began as a fisherman's breakfast — creamy stone-ground grits under a skillet of buttery shrimp, tomatoes, and onions, finished with a splash of white wine.

Bring the water to a boil and add the grits slowly.

Cover, reduce the heat to low, and stir occasionally as the grits thicken.

As the grits thicken, stir in the half & half and continue cooking for about 1 hour, stirring occasionally.

For the shrimp gravy: melt a dollop of butter in a frying pan and sauté the tomatoes and onions over medium-high heat until they begin to caramelize.

Toss in the shrimp and stir until they turn pink, then splash in the white wine and cook until the shrimp are done and the wine has reduced.

Plate the grits, spoon the shrimp and gravy over the top, and enjoy.
